It’s still quite cold here in Chicago, so I’m “California Dreaming” on such a gloomy day! Here is a great juicing recipe using lots of carrots, which are high in vitamin A and K, also provide some potassium and fiber. Its bright orange color combined with the sweet apples, zesty lemon and kick-a** ginger are enough to wake you up and put you in a spring-y mood.
While some people swear by juicing – being meal replacements. I would say this would be a hard lifestyle to carry on. While fresh juice is packed with nutrients, it’s hard to stay full on the liquid, which has now lost a lot of its fiber. BUT, I do love juice as a natural “pick-me-up”, it’s great to enjoy with a light meal or instead of those nasty soda beverages. I’ll spare you my angry soda rant. For now.
Serving Size: Makes about 4 cups (8 oz. each)
8 Small apples
2-3 TBL ginger (to taste)
Peel carrots and remove skins of apples, lemons, and ginger. Put all ingredients into the juicer and make sure there is a big enough bowl to catch the juice. That’s it! I like mine served with ice-cubes to keep it nice and cool.
I’m wondering if this recipe would be good in a blender for those who do not have a juicer. If you happen to try it, let me know.
