This simple sauce will add a great kick to your plain and boring roasted veggies. I’m a fan of just doing a simple oil, salt, and pepper coating…. but sometimes it’s nice to switch it up!
1/2 head of cauliflower and 1/2 head of broccoli (or one full head of either)
3 Tbsp olive oil
1/2 lemon (juiced)
3 tsp curry powder
2 tsp cayenne powder
dash of salt
Preheat oven to 425 degrees. Coat a cooking sheet or pan with oil or butter so the veggies won’t stick to badly. Mix all the sauce ingredients together in a bowl and dunk your veggies to coat them. Put on your pan/sheet and cook for about 20 minutes, or until veggies start to brown and they are easy to stick your fork in!
Easy. Delicious. Healthy.
Serve with your favorite main course, like skirt steak, chicken, or ribs!
