With summer coming up, there will be tons of picnics and BBQs ahead. I’m ready for some yummy egg salad! This recipe has a little twist: to add some spice for extra flavor and cilantro for a refreshing finish. (This recipe is vegetarian, gluten-free, and paleo friendly)
(serves 3-4 sides dishes or salad toppers)
6 Hard boiled eggs
3 1/2 Tbsp dijon course mustard
1/2 Tbsp hot sauce of your choice (optional, and to taste)
1/4 cup cilantro (finely chopped)
1/4 cup mayo (feel free to make your paleo version)
1/4 of one sweet yellow or white onion
1/4 cup chopped celery
Dash of sea salt and pepper
Make sure to chop all ingredients. In a large bowl, smash the hard boiled eggs with a fork. Add in the rest of the ingredients. Better if cooled off in the fridge until serving – at least 15 minutes.
Add to a salad for a main dish, or serve as a side with your favorite paleo entree! Did I mention this was really easy? I love being able to whip up a meal in a matter of minutes!
