We are in for a treat! I’m celebrating two big events today… 1. It’s my birthday! and 2. Nine Inch Nails announced their upcoming album in September and streaming their new single today.
For both me and Trent Reznor, I had to make a special dessert. This recipe is gluten-free and paleo friendly (AS A TREAT, not an everyday item). Vegetarian/vegan option: remove the bacon! Easy and still awesome. WHY did I pick this recipe? Read below!
3 Slices of Bacon (nitrate-free)
5.4-6 oz of Dark Cocoa bar
Almond Butter: estimated amount of spread
Almonds (chopped): estimated amount of cover
wax or parchment paper
First Station: Fry up your bacon and lay on a paper towel to cool. Slice bananas and place on wax or parchment paper, spread almond butter on to half of slices, place pieces of bacon on top of almond butter. Place other banana slice on top to create sandwich of banana, almond butter, and bacon. Put in freezer for at least 40 minutes. The longer the better.
The chocolate I am using is Taza brand. It is organic, and only two ingredients: organic cocoa beans and organic cane sugar. It is so pure, you can see the sugar granules if you look closely (see below). I thought this might not taste so great with only two ingredients – and trust me, I am picky! But it is truly awesome – comparable, if not better, than the leading 70% dark cocoa bars without all the junk! Just as long as you don’t mind the sugar texture. I love it! Is chocolate healthy? In moderation. I’m using dark cocao – plenty of endorphin-boosting, antioxidant-flowing, and taste-bud-loving going on. I think as long as you aren’t pigging out daily on the stuff, it’s good to have once in a while.
Anyway back to recipe…
Second Station: Melt your chocolate. I did this in a microwave, in small amounts of chocolate, in increments of time and stirring in between so not to burn it. Take out your frozen banana sandwiches. Dip and roll them into the chocolate and coat with chopped almonds. Place back on wax or parchment paper. When done, put back in the freezer for at least 1 hour. Once hardened, transfer to a tupperware to avoid freezer burn.
Ok, so WHY the HECK did I pick this recipe for today? Besides my LOVE of bacon and my LOVE of chocolate?….
Trent (Nine Inch Nails) has quite an obsession for piggies in his songs (March of the Pigs, Piggy, and others), hence the bacon. I’ve heard that his favorite candy (at least used to be) Reese’s peanut butter cups – me too! So, I am including the almond butter and chocolate to resemble that. Plus… just look at how much Trent likes frozen chocolate-covered bananas!….
