Here is a great recipe that using a variety of fresh vegetables, packed with nutrients and flavor! It also makes for some delicious leftovers, so don’t worry about making too many.
Makes 18-20 rolls
Need: 1 large pan, Greased cooking sheet, 1 large greased cooking dish, tongs help take rolls out of dish
2 Medium/Large eggplants
1 small white/yellow onion
1 bell pepper
1 cup spinach
1 cup mushrooms
1 can organic tomato sauce (about 10 oz.)
1 clove garlic
3 TBSP olive oil
8 fresh basil leaves (chopped)
Dashes of salt and pepper
Optional: For meat and cheese eaters – you can add 1/2 pound ground beef or favorite meat substitute. You can add sprinkles of Parmesan or your favorite cheese substitute. For Whole 30, do not add cheese.
Heat oven to 350 degrees. Chop vegetables and garlic: tomato, mushroom, onion, pepper into small even pieces. Pan cook these in 1/2 tbsp olive oil at a low heat for 5 minutes. Add in 1 tbsp paprika, spinach, and basil, salt and pepper. Cook for another 5 minutes, making sure they cook to the state in between mushy and hard (they will cook more in the oven soon).
Optional Meat: Cook 1/2 pound ground beef in separate pan with salt and pepper until all pink is gone. Add to vegetable mix.
In the meantime, slice eggplant lengthwise into very thin slices. Coat with remaining olive oil and dashes of salt. Be sure there is enough on the bottom so eggplant won’t stick to cooking sheet or foil. Lay slices down on aluminum foil or cooking sheet. Cook in oven at 350 for about 10-15 minutes or until edges start to curl and eggplant becomes soft enough to bend.
Remove eggplant from oven and turn off heat under vegetables. Scoop about 2 tbsp of veggies from pan onto the widest end of one eggplant slice. Roll the eggplant slice around veggies and place into a greased cooking dish. Once all rolls are in dish, cover in tomato sauce. Optional cheese: sprinkle Parmesan or vegan cheese if desired.
Cook eggplant rolls for 8-10 minutes. Once rolls are on plate, garnish with fresh basil.
Using tongs will help remove eggplant rolls from dish.
