I’ve heard controversy on the importance of breakfast, but I believe in eating when you are truly hungry and well, when I wake up… I’m ready for food within a few hours! I love my typical breakfast of 2 hardboiled eggs and a banana, but once in awhile, you need some variety. Only so many days I can do that in a row!

I know I know, pumpkin is usually an autumn thing, but I LOVE IT! It really makes this “oatmeal” enjoyable – almost reminds me of eating pumpkin pie, and who doesn’t want THAT for breakfast?

With protein from nuts and egg, some natural carbs from the banana, and healthy fat from the nuts and coconut milk, this is a real power-house recipe that will start your day of with a burst of energy! This recipe is vegetarian, gluten-free, and paleo friendly!

2-3 Servings

1/2 cup walnuts
1/2 cup almonds
1 banana
1 egg
1 cup pumpkin
1 cup coconut milk
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp vanilla
2 tsp sea salt

Put walnuts and almonds into a food processor and grind up until fine. Add in the remaining ingredients and grind until smooth. Heat up in a pan on low-medium heat for 5 minutes, making sure to stir every minute.

Optional: Top with your favorites paleo oatmeal toppers: (dates, raisins, banana, berries, nuts, chia seeds, flax, honey)

Ready to eat! Or store in small individual containers.

  1. Gotta try this. Do you use organic canned pumpkin? And do you beat the egg before adding it to the heated pan?

    • Thanks missbocnnor! Yes, I chose organic canned pumpkin. It happened to be at my local fresh market (Mariano’s), but it may or may not be available in all grocery stores. Also, since the egg is going into the food processor with the rest of the ingredients, no need to beat! :)
