4th of JULY FRUIT & COCONUT POPSICLES

AKA: The “Fight For Your Right” Pops

Since the weather is warming up, I have been craving cold treats and fresh fruits. This is the perfect blend of both and you can include it in your 4th of July celebration with no guilt… knowing that it is made up of all natural, REAL foods!

These are also really quick to make (except for the freezing part which takes some patience). Make sure to plan ahead and do it the night before to be sure they are ready for your event. This recipe is vegan, vegetarian, gluten-free, raw, dairy-free, and paleo friendly!

Even our family dog, Scooby, wants some fresh berries….

RECIPE
Makes about 8 popsicles

2 Bananas
1/2 can (or 1 cup) full fat coconut milk
1 tsp vanilla
1 tbsp honey (for vegan, replace with agave or other fav. sugar replacement)
1/2 tsp sea salt
3/4 cup raspberries
3/4 cup blueberries

Drop raspberries into popsicle molds and make sure they are pushed all the way down at the bottom.

Blend together the bananas, coconut milk, honey, salt, and vanilla. Pour mixture into popsicle molds, over the raspberries – leaving room for blueberries so it doesn’t overflow.

Drop blueberries on top of the mixture in the popsicle molds. Finish off the pops with the popsicle sticks and place in freezer overnight.
