When life gets busy, it’s time for a quick and easy recipe! I know that eating out all the time isn’t good for me, but sometimes, I am just SO busy… it’s hard to find the time and energy to cook a meal. This is something I know I can make quickly. While it’s cooking, I can take care of some chores, and create a side salad or other veggie to go with. If you make plenty, you will have some leftovers for the next day too!
Makes up to 4 chicken breasts
4 chicken breasts
1/3 cup olive oil
2 tablespoons dijon mustard
2 tablespoons honey
1/2 orange, juiced
2 teaspoons cayenne pepper
dashes of salt and pepper
Preheat oven to 350 degrees. Set aside a deep oven-safe cooking dish large enough for 4 chicken breasts.
In a bowl, combine oil, honey, mustard, and orange juice and mix well. Place chicken in the cooking dish and cover with liquid. Let marinate for at least 20 minutes, up to 8 hours.
Sprinkle cayenne pepper, salt, and black pepper over the chicken. Place chicken in cooking dish, pour the extra sauce over the chicken, cover dish with aluminum foil to keep moisture in. Cook for 35-40 minutes at 350 degrees. Check at 30 minutes, see if chicken is still pink inside. If there is no pink, it’s ready to eat!
