Sometimes, I like to have a little treat… especially chocolate! But eating tons of preservatives and other junk that goes along with store-bought pudding is not an option! For a less guilty option, I’m making my own chocolate pudding.
I’ve found other recipes online that just are not sweet enough, not chocolate-y enough. So I’ve added an extra punch to kick it up a notch.
1 cup coconut milk OR almond milk
3 TBSP chia seeds
2.5-3 TBSP cocoa powder (to taste)
1 teaspoon vanilla (extract or raw)
2 TBSP honey or maple syrup
Combine all ingredients in a bowl and whisk until smooth. Keep extra coconut milk or almond milk on hand in case it is too thick for your liking. Let the mixture sit for about 1 hour in the refrigerator. (Though the mixture will begin to thicken way before that).
Serve with chocolate garnish (optional, but delicious).
