3 WAYS TO MOTIVATE OTHERS TOWARDS HEALTH + GUEST CHEF MAKING GREEN BEAN BACON SALAD RECIPE!

One thing I’ve learned about eating healthy is that you cannot make others do it too. You have to be your own guide and find your own support system that works for you. While this may be discouraging when the ones you love are shoveling in fast food by the bucket, there is some hope to make small steps in the right direction.

1. Be An Inspiration

People learn and get ideas from each other. When you see someone doing something you think is great, you want to do it too, right? Same goes for eating! Share your meals, recipes, and ideas and others may take notice.

2. Host a Meal or Share a Recipe/Dish

If you know how to make a healthy recipe, invite friends over to share a meal with you. Let them know why this meal is special and what makes the meal so healthy. You can also prepare something and bring it to work to share at the office!

3. Plan a Group Workout

Gather a friend or two, or three, and make a schedule for workout times. Don’t back down, even if they do. They might not want to go all the time, but if you keep it up, stay strong maybe they will come around. (If they don’t, then they were not ready to take this small step, so don’t put them down for it).

And now, I would like to share how I took one of these steps: (# 2: Host a Meal)

My friend Aisha (founder of Mukki Shop – check out her Etsy shop!) graciously invited me and two other girls over and we planned a healthy meal together. She created a green bean bacon salad and requested I make my spaghetti squash recipe. The two dishes were hits! And we were all introduced to something new that day that we could take and make in the future.

RECIPE: GREAN BEAN BACON SALAD
AKA “Date with the Night” by Yeah Yeah Yeahs
Serves 4

4 slices of bacon (we used uncured turkey bacon, which was really yummy too!)
4 cups or generous handfuls of green beans
15 cherry tomatoes
1/2 cup feta cheese

Dressing (mix in a bowl):
2 Tbsp olive oil
1 Tbsp balsalmic vinegar
dashes of oregano
dashes of salt and pepper

Steam the green beans in a pot for a few minutes until al dente, and let cool and drain excess water. Add to a big bowl.

Sizzle up the bacon in a pan (no oil needed, it should grease itself. Cook evenly on both sides until crisp. If grease is “jumping”, the pan is too hot! When done, place the bacon on a paper towel to soak grease and cool. When cool, crumble into large chunks.

Just look at that delicious, extra crispy turkey bacon!…

Cut or crumble the feta cheese into pieces. Slice cherry tomatoes in halves. Add in feta cheese crumbles and dressing to the bowl with green beans. Mix up and dash with salt and pepper.

Even Lolo the cat was so intrigued by all the cooking! She watched us the whole time, and even got to play with some spaghetti squash seeds that fell on the floor…
