Want to make a creepy cute surprise for your valentine? These zombie chocolate treats look super sweet and when you bite into them, it really looks… um… gross? Realistic? Like brains are falling out? Yea… I would say delicious!
Valentine’s Day is right around the corner, but don’t worry you still have time to make some sweet treats for your special someone, so let’s do that without out the chemicals and GMO’s and such (why would you feed that stuff to the one you love?). This recipe is vegan, gluten-free, dairy-free, and paleo. In otherwords…healthier than that store bought candy!
Let’s get started because you need some time for these babies to set in the freezer.
2 cups of chocolate for melting
1 cup cashews
1 cup shredded coconut
1 tsp vanilla (1/3 tsp if using raw powder)
8 medjool dates
dash of salt
1/2 cup cashew butter*
2 1/2 cups fresh strawberries
1/2 lemon juiced
1 T lemon zest
1 tsp vanilla
1 T pure stevia or honey
*I couldn’t find cashew butter, so I made my own. Find recipes online. If you are in a hurry, you can put 1/2 cup cashews in a food processor and add 1-2 T melted coconut oil (enough to make cashews smooth and creamy. Also can add dash of sea salt, and 1 T honey.
Make the crumble: Once dates are pitted, put all crumble ingredients into a food processor. Pulse for 1-2 minutes until it becomes “crumbled”. Texture should be sticky. Press into an 8 x 8 greased pan.
Make the cheesecake: Put all ingredients in a food processor. Turn on for 1 minute and continue to pulse until all fruit pieces are no longer visible. Should be the texture of a smoothie.
Pour strawberry cheesecake “smoothie” on top of the crumble that’s in the pan.
Cover pan with aluminum foil and place into freezer. Freeze as long as possible, best if overnight.
When ready, cut into small squares. You can eat as is or cover in chocolate:
Lay out a sheet of parchment paper or wax paper on to a baking sheet or cutting board.
Put bite sized squares onto a sheet of parchment paper or wax paper. Melt your chocolate in the microwave and pour over your squares. Once covered in chocolate, put the squares back into the freezer. Let set for at least 30-60 minutes. The longer the better!
To get skull shape, you will need to find a skull mold. I bought one like this. Pour a layer of chocolate into the mold, crumble in some of your cheesecake bites and pour more chocolate on top. Set in freezer.
