A little while back, I ordered my own free sample of ALOHA Daily Good Greens, and loved it ever since. I have had so much fun working with Aloha and coming up with my very own recipe using The Daily Good! The result was some delicious energy bars! It’s awesome to collaborate with other like-minded people…
Packed with protein, healthy fats, and amazing ingredients from The Daily Good, these energy bars are great for breakfast, pre-workout, afternoon snack, or any other time you need it to power through your day!
Serving size: Makes 4 bars
½ cup almonds
½ cup cashews
2 Medjool dates, pitted
zest from 1 lemon (about 1 T)
2 T shredded coconut
½ t salt
3 T coconut oil
1 T maple syrup
1 packet ALOHA Daily Good Greens
Add almonds, cashews and dates (pitted) to a food processor. Pulse until all ingredients are a “crumbled texture” – like small pebbles (as seen in photo above). Add in the lemon zest, shredded coconut and salt to the food processor and pulse once or twice just to thoroughly combine all the ingredients.
In a medium-sized bowl, warm up the coconut oil in the microwave so it melts. Add in the maple syrup. Stir in the dry ingredients from the food processor and stir well. Add in a pack of Aloha: The Daily Good and mix until all ingredients are combined.
Pour ingredients onto a sheet of wax or parchment paper. Using your hands, press everything together tightly so it will stick together. Keep pressing from all sides and from the top as tough you are forming a compact square, about ½ inch thick. You can also fit ingredients into a small pan if that helps.
Wrap or cover your square and place into the refrigerator for at least 1 to 2 hours, until coconut oil hardens. This means your bar is ready to cut. Take out the square and cut into 4 equal bars. Store in fridge to keep the oil from melting (bars do not need refrigeration to be safe to eat).
