tomato sauce recipe, homemade tomato sauce

Italian food was always my easy, go-to food to cook. I could just whip up some pasta and sauce, throw in some veggies or meat and … whala! Well now, I’ve come a long way since my pasta-eating days, but I still have found some GREAT ways of making simple Italian dishes that are flavorful and healthy without all the processed junk.

Why make your own sauce? If you buy pasta sauce from the store, you may want to check out the ingredients. It is surprising how much added sugar and salt they include! I think it is unnecessary. So, I decided to make my own with the tons and tons of tomatoes I had growing in the garden. The best part is, you only need a few tablespoons of sauce to make your dish great and you can store the rest in the fridge for later!

4 cups tomatoes
1 can tomato paste (6 oz.)
1/3 cup green onions
2 cloves garlic
2 Tbsp apple cider vinegar
2 tsp tamari or coconut aminos
2 Tbsp horseradish dijon mustard
1 Tbsp fresh basil
1 tsp chili powder
1 tsp paprika
1 tsp salt
1 tsp black pepper
1 tsp ginger
1 tsp cayenne
dash of black pepper to taste

Dice tomatoes, green onions, and garlic. Add to a pot and bring to a boil. Let simmer for about 20-30 minutes. Turn off heat, let cool at least 5 minutes in order to pour into food processor or blender. Pulse in food processor until smooth.

Add back to the pot. Add the remaining ingredients, stir well, and return to boil. Let simmer once more for 20-30 minutes.

Serve on top of your favorite dishes like Spaghetti Squash or Tomato Veggie Eggplant Rolls or Personal Portobello Pizzas!

Keep your sauce stored in the fridge or freezer :)
