Lately, I have been craving samosas like crazy! But, most samosas are made as fried dough pockets of potatoes and other ingredients, so I wanted to find a recipe that was gluten-free and slightly healthier for a quality meal. It is times like these that I am so grateful for the internet and all the amazing recipe-sharing people out there! I was lucky enough to come across this Sweet Potato Samosa recipe by Peas and Crayons!
This was super easy to make and full of flavor. While sweet potatoes (Yams) do have their own unique flavor, it was surprisingly great with all the Indian spices including lots of curry!
I would definetely make this recipe again and again and again. Also… it goes perfectly with my Tandoori Chicken Recipe!
Tips for this recipe:
-I chose to microwave the sweet potatoes. I get home really late, so this saves me a lot of time. It still took the whole time I was cooking the other veggies for the potatoes to be ready.
-Once they are ready, I mixed it in the veggies and served. Sorry! No skins for me, but if potato skins float your boat, by all means… serve within!
