These chocolate chip protein muffins are great way to get a quick and healthy breakfast or snack. They are so easy to make, done in less than 25 minutes, and will be easy to pack up and take with you on the go!
And, of course, these protein muffins are gluten-free and paleo-friendly.
Makes 6 muffins
6 Tablespoons Coconut Flour
4 Tablespoons Almond Flour
1 scoop of plain or vanilla protein powder (I like THIS one)
1/2 cup almond milk (or milk or milk substitute)
1/2 cup applesauce (OR 1 mashed banana – note that a banana will add banana flavor)
1 teaspoon Vanilla extract
1/2 teaspoon Baking powder
Dash of Salt
4 Tablespoons of chocolate chips
Preheat oven to 350 degrees F. Grease 6 cups of a muffin tin.
In a medium-sized bowl, crack the eggs and mix them until broken up. Add in the rest of the ingredients except for the chocolate chips. Mix all ingredients until a thick batter forms. Mix in chocolate chips last.
Add batter to the muffin tin. Put muffin tin into the oven and bake for 20-25 minutes.
Let cool and serve!
